Hello , i am waiting for my new BRZ and i want to change the wheels . i want to know what's the maximum tires width i can put on it . and how can i choose the rims for the good tire size . for example i want to put 255 / 35 r18 tire on it . so how can i choose the rims for that ? thank you

18x8.5 or 18x9 would be the best options in my opinion. Not sure what Offset you'd need.

New suspension will be needed to go that wide for sure. Even 245 doesnt fit with certain wheel offsets.

will 235/40 work on 18X8.5 without any rubbing on stock suspension?

Not sure. That makes for a much taller tire. 235s are a weird size for our use. A 40 sidewall is much taller than what we have but a 35 is smaller. I know there is a thread around with tire\wheel sizes that people are successfully using.
